Banana and Granola Breakfast Muffins

These muffins are a deliciously moist and satisfying treat. With the added protein from the Fava Mill granola they will keep you satisfied for longer. Fava Mill granolas are an excellent plant source of protein and fibre, as well as many vitamins and minerals. This makes them great for vegetarians and vegans who might sometimes struggle to get enough protein in their diet. As well as regular exercisers wanting to boost their protein intake.

Brand new to the UK, Fava Mill Granolas have considerably more protein per gram than a boiled egg and are low in salt but high in fibre. This makes my Banana and Fava Mill granola muffins a perfect breakfast, brunch, cheeky dessert or afternoon tea treat. Incredibly easy to make, you literally throw everything in a processor and whizz it all up! Give them a try. You won’t regret it.

Ingredients
  1. 4 large ripe bananas
  2. 4 tbsp Fava Mill Crunchy granola plus extra to sprinkle on top of the muffins
  3. 60g coconut flour
  4. 1 tbsp cinnamon
  5. 1 pinch salt
  6. 4 medium eggs
  7. 50g/3 tbs coconut oil, melted
  8. 1 tsp vanilla extract
  9. 1.5 tsp bicarbonate of soda
  10. 1 tbsp apple cider vinegar
  11. 1/2 tbsp maple syrup for the batter plus a little more to brush over the top of the muffins
Instructions
  1. 1. Skin the bananas. Weigh out 350g and mash until smooth. Reserve the leftover banana to decorate the top of the muffins.
  2. 2. Preheat oven to Gas 4/180ºC and line a muffin tin with muffin cases.
  3. 3. Whisk the dry ingredients together, then stir in the eggs, mashed banana and the rest of the wet ingredients using only ½ tbs maple syrup and mix until smooth. Alternatively throw everything into a food processor and blend until smooth.
  4. 4. Pour the batter into the lined muffin tin. Decorate the top with slices of reserved banana and Fava Mill crunchy granola.
  5. 5. Bake at 180ºC for 30mins – 35min or until a knife comes out clean.
  6. 6. Cool on a rack and brush the top of the muffins with maple syrup.
