Pea Fritters With Smoked Salmon & Caviar

These delightfully green fritters make an awesome brunch or lunch as well as a canapé for pre dinner drinks or cocktail hour on the terrace.

I make pea fritters a lot. Any fritters to be honest. They are so versatile and easy. When the cupboards and fridge are looking pretty bare I almost always have a bag of peas in my freezer. Don’t we all? Mix them together with a few store cupboard ingredients and voila you have a delicious and healthy base to adorn however you like.

Sometimes I like these just as they are with a nice tomato salad and other times when I am in a fancy mood I take it up a couple of levels and top my pea fritters with slices of delightfully pink smoked salmon, a dollop of sour cream and an adornment of caviar. Serve the decadent fritters with a generous amount of fresh dill and a lemon wedge for that extra citrus pop of flavour.

Make these fitters half-size to serve with drinks as a delicious canapé or a pre-dinner nibble. They are incredibly versatile. If you don’t have a bag of peas lurking in your freezer try using grated courgette or carrot as an alternative. Be sure to drain the excess liquid though. You don’t want a gummy fritter!

  • Food processor


  • 150 g frozen peas cooked to packet instructions
  • 75 g self-raising flour
  • 1/2 tsp garlic powder
  • 1/4 tsp dried mint
  • 1/4 tsp dried dill
  • 2 free-range eggs
  • 3 tbsp milk
  • 1/2 lemon zest only (reserve lemon for garnish)
  • Salt and pepper to taste
  • Vegetable oil or oil spray to fry

To Serve

  • Sour cream
  • Smoked salmon
  • Lumpfish caviar by Elsinore
  • Fresh dill


  • Throw all your fritter ingredients into a food processor and blitz until the peas are roughly chopped and you have a chunky batter
  • Heat some oil or spray a frying pan with oil spray and spoon heaped tablespoons of the mixture into the frying pan. Cook gently over a medium heat until both sides are golden. 2-3 minutes each side should do it.
  • Serve your pea fritters topped with sour cream, smoked salmon slices and a spoonful of Elsinore Foods lumpfish caviar. Sprinkle over sprigs of fresh dill and serve immediately with a lemon wedge for a hit of acidity.
