My week in pictures

I started my week with dinner at Tara’s Busy Kitchen with three chums. Serena, Billy and Dan headed over on the first light evening of the year. For those of you that live in the United Kingdom we switched to British summer time last weekend which makes me feel that warm weather is definitely on the way. Having that extra hour of daylight makes all the difference to me as I am sure it does for many of you out there too.

I made some brightly coloured beetroot hummus and served it with carrot battons together with some delicious seeded sourdough lightly toasted and smothered in black olive tapenade. The perfect nibbley starter alongside a glass of bubbles.

For our main course I made a courgette, feta, mint and lemon salad which will definitely get a feature on the blog at some point alongside my recipe for Cauliflower Polonaise.

Serena had made a beautiful raspberry frangipane tart that was melt in the mouth. A real treat.

I popped into Ashburton to catch up with two friends over tea and cake. Taylor’s is our “go to” cake stop in Ashburton. It’s well worth a visit if you like the vintage tearoom vibe.

Carmen came over for lunch on Friday and I was determined to christen the new garden furniture. Despite the slightly inclement weather we both experienced our first al fresco lunch of the year!

With it being the first weekend of April and the start of the Easter holidays I feel that it won’t be long before the weather improves and dining outside will be an everyday occurrence.

Have a wonderful week ahead everybody. Next week is a busy one with lots of events to attend. A drinks and food demonstration at the newly opened Berloni kitchens in Princesshay, the launch night of Polpo (the newest addition to the Queen Street Dining area) and my second collaboration with Cabinet Jewellery. I can’t wait to share it all with you.
