I’m always getting inspired by my travels and bringing ideas home with me to try out. So I thought I would share with you one of THE best taste sensations. Have you ever tried cheese and honey together? On recent travels across Italy it featured on many a restaurant menu and I have to say it’s magnificent in its simplicity. Get yourself some top notch local honey (I used Princesshay Honey obviously!) and some local hard, goats or soft cheeses then off you go. Drizzle the honey over the cheese to your hearts content. There are no hard and fast rules so have a play around but the ingredients have to be good and local to each other. This is how you know the flavours will mix well.

The exceptionally hot weather in June has resulted in Princesshay’s bees producing a bumper batch of honey. The beekeepers at Princesshay are expecting 400lbs of honey. 4 times more than in previous years, which will be sold exclusively at Chandos Deli in Princesshay in aid of Children’s Hospice South West. Princesshay beekeeper Jason Wallis, said: “This is our fourth honey harvest and it is set to be easily the biggest yet thanks to the exceptionally warm weather during the early part of the summer. The honey will be collected at the end of August, ready for sale in Chandos Deli at the start of September.”

Princesshay’s City Bee project began in 2012, when a tranquil rooftop garden was created for honey bees high above the shopping centre as part of an environmental initiative which forms part of the company’s wider biodiversity strategy. Princesshay regularly encourages visitors to visit the project and get an insight into the busy world of bees.

To date, the city bee project has been visited by over 1000 school children, students and members of the public. Now entering its 5th year, Princesshay’s city bee project continues to grow, with the project now housing 5 hives with approximately 300,000 bees.

  1. My grandmothers honey loaf recipe is just lovely. Sliced whilst still warm from the oven and generously spread with butter …mmm

  2. Drizzled over my new favourite salad – leaves, figs, walnuts and blue cheese. Honey and balsamic vinegar mixed together and drizzled over. Yum!

  3. Currently, it would be having honey in a turmeric latte to help get rid of a cold- almond milk, honey, turmeric, ginger and lemon zest 😋

  4. I am only just discovering how much I enjoy honey. I don’t think I’ve given it much love until this year and realising how delicious it is. I think my favourite is a simple breakfast bowl with good Greek yogurt, fresh banana drizzled in honey and topped in chai seeds. Fills me up well to startha busy day.

    1. That sounds pretty darn good. I think sometimes the most simple ways to enjoy honey are the best.. I love to drizzle mine over cheese. You should try it!

  5. I like using honey when making salad dressing. For example, I once came across a really simple but delicious dish: grilled courgettes with honey, balsamic and balsamic glaze dressing. Just yummy xxx

  6. Both myself and my children love honey drizzled over porridge. The best way to start the day, especially at this time of year 😊

  7. i make my own essential oil products a s a hobbie , i quite oftern use honey in my blends , for my creams , lipbbalms …and while these are setting i eat the honey on toast 🙂

  8. I love to use honey to coat my parsnips and carrots before roasting them. Even my kids don’t turn their noses up at veg when they taste this good!

    1. I guess as a parent, having healthy veg options is a bonus. You are so right about the honey and root veg thing. The sweetness of the veg really comes out with a drizzle of honey.

  9. At this time of year my favourite honey recipe is a rum hot toddy, with dark rum, honey, lemon juice and rind some grated nutmeg and finished with a cinnamon stick. Perfect at bedtime, yummy.

  10. Favourite way to use honey? On everything! 😀 Although I like it in yogurt with fruit and dried nuts or (don’t judge me) in a ham sandwich 🙂 It’s got to be the runny stuff for me though 🙂

  11. 1) In a smoothie with strawberries, one banana, mango and some porridge oats
    2) Drizzled on a home-baked apple pie!
    3) A teaspoon stirred into hot chocolate.
    4) To accompany blueberry pancakes….

    There are just so many options 🙂

  12. I love honey with thick Greek yoghurt,fruit and nuts.I am also partial to fresh crusty bread and butter dipped in honey.. I am a lover of cheese though so thank you for sharing as I have some experimenting to do 🙂

  13. I love honey in camomile. I have camomile flowers sent to me by my grandad from the Italian village he’s from. Very precious for me!
