Throw all your fritter ingredients into a food processor and blitz until the peas are roughly chopped and you have a chunky batter
Heat some oil or spray a frying pan with oil spray and spoon heaped tablespoons of the mixture into the frying pan. Cook gently over a medium heat until both sides are golden. 2-3 minutes each side should do it.
Serve your pea fritters topped with sour cream, smoked salmon slices and a spoonful of Elsinore Foods lumpfish caviar. Sprinkle over sprigs of fresh dill and serve immediately with a lemon wedge for a hit of acidity.
