Pea Fritters With Smoked Salmon & Caviar

Ingredients

  • 150 g frozen peas cooked to packet instructions
  • 75 g self-raising flour
  • 1/2 tsp garlic powder
  • 1/4 tsp dried mint
  • 1/4 tsp dried dill
  • 2 free-range eggs
  • 3 tbsp milk
  • 1/2 lemon zest only (reserve lemon for garnish)
  • Salt and pepper to taste
  • Vegetable oil or oil spray to fry

To Serve

  • Sour cream
  • Smoked salmon
  • Lumpfish caviar by Elsinore
  • Fresh dill

Instructions

  • Throw all your fritter ingredients into a food processor and blitz until the peas are roughly chopped and you have a chunky batter
  • Heat some oil or spray a frying pan with oil spray and spoon heaped tablespoons of the mixture into the frying pan. Cook gently over a medium heat until both sides are golden. 2-3 minutes each side should do it.
  • Serve your pea fritters topped with sour cream, smoked salmon slices and a spoonful of Elsinore Foods lumpfish caviar. Sprinkle over sprigs of fresh dill and serve immediately with a lemon wedge for a hit of acidity.
