My homage to the Commonwealth Games comes in the form of these delicious Anzac Biscuits. With this years games being held on Australia’s Gold Coast I wanted to create something that would highlight this. I may not be a sporty gal myself but I do enjoy watching all those talented sportsmen and women do what they do best. Plus, I do love an opportunity to have a cup of tea and a biscuit! This recipe came to me one morning whilst working on porridge recipes for Buy Whole Foods Online and needless to say I got slightly sidetracked. Whoops! Don’t worry though, my ‘Pimped Up Porridge’ post is going to be a goodie and will be with you very soon. In the meantime whip up a batch of the beauts and enjoy!
The Anzac Biscuit is a sweet biscuit popular in Australia and New Zealand that have been long associated with their national armies. The biscuits were often sent from wives and girlfriends to their significant other when abroad. Using ingredients that travelled well and didn’t go off quickly they were an ideal treat for the soldiers.
Today Anzac biscuits are made commercially for sale and are associated with ANZAC day which is a National day of remembrance for all Australians and New Zealander’s that have served and died in wars and conflicts. Not available to buy in the U.K. as far as I am aware so why not make a batch? They are deliciously moreish and take next to no time to pull together and bake. With a texture similar to a coconut macaroon they are ideal as an afternoon treat whilst you sit down and watch the Commonwealth Games on the television.
- 85g porridge oats
- 85g desiccated coconut
- 100g plain flour
- 100g caster sugar
- 100g butter, plus extra butter for greasing
- 1 tbsp golden syrup
- 1 tsp bicarbonate of soda
- Heat oven to 180C/gas 4. Put the oats, coconut, flour and sugar in a bowl. Melt the butter in a small pan and stir in the golden syrup. Add the bicarbonate of soda to 2 tbsp boiling water, then stir into the golden syrup and butter mixture.
- Mix the dry ingredients with the butter and golden syrup mixture. Stir together.
- Put dessertspoonfuls of the mixture on to buttered baking sheets, about 2.5cm/1in apart to allow room for spreading. Bake in batches for 8-10 mins until golden. Transfer to a wire rack to cool.
