I can’t believe it’s been 3 weeks since we celebrated the beautiful wedding of Alex and James. What a weekend it was! 💍✨ I cherished every moment spent with the other bridesmaids—building our relationships, eating delicious food, getting ready together, and enjoying some good old healthy girl time with slumber party vibes.

Utilising my time in the executive lounge at the airport to catch up on my Insta-admin and share a fab seasonal recipe with you all! 🍅🧀 Presenting: Baked Ricotta with Lentils and Tomato—a simple yet scrumptious dish perfect for enjoying outdoors with friends.

With the weather being as outstanding as it is, this easy recipe is ideal for terrace dining. Pair it with a fresh green salad or some fine green beans for a meal that’s sure to impress.

What are you waiting for? Get making, get outside, and pop a cork on something delicious like this rosé from @drinkamie (as you can imagine it’s way better than the rosé in the executive lounge here 😂) Cheers to sunshine, good food, and great company! ☀️🥂

Serves 2 (easily doubled/trebled)
1 pouch @merchantgourmet puy & green lentils 
1 small onion or a couple of shallots, chopped finely 
250g tub ricotta
Zest & juice of a lemon 
Salt & pepper 
A handful chopped dill
A handful of chopped parsley 
A handful of chopped basil 
1/2 tsp dried oregano 
50 ml Olive oil 
Salt and pepper 

Method
Heat the oven to 180C. In a frying pan sauté the onion in a little olive oil until soft. 

Pour the onion into a heatproof dish. Add the lentils & stir together. Make a dressing with the juice & zest of the lemon, the rest of the oil and half the herbs & season. 

Make a well in the middle of the lentils & place the ricotta in it. Add the cherry tomatoes & drizzle everything with the dressing. Shake a little to distribute. 

Bake in the oven for 30-35 minutes until the tomatoes start to pop and the ricotta firms up. 

Serve with a drizzle of olive oil & sprinkle with the remaining herbs. A salad or some green beans on the side works well alongside some warm crusty bread. 🤌🏻

A carousel of birthday celebrations at @briar_restaurant in charming Bruton, Somerset! 🎉🍽️ This fab restaurant is a true gem in a town that’s a haven for food lovers, specializing in delicious seasonal food served simply to celebrate their incredible flavours.

Chef Sam Lomas, formerly of Glebe House in Devon, has truly transformed this spot into a must-visit destination. I was blown away by my first taste of this season’s English asparagus with smoked crème fraîche—it was simply stunning! Also on the menu were goats curd with mange tout, ricotta toast with rhubarb and mackerel with smoked eel and lovage mayo, each dish a delightful celebration of the season’s bounty. Dessert of apple cake with butterscotch sauce was a triumph especially as I was kindly presented with a special cider brandy chocolate truffle complete with candle alongside to continue my birthday celebrations.

🌊✨ Yesterday I took a delightful jaunt to Budleigh Salterton with my friend @re6ecca6urdus , where time seems to stand still. We kicked off our day with iced coffees and creamy soft serve at the retro-cool new @kapes.uk , the perfect start before a leisurely walk along the beautiful beach with cutie-pie Maggie the dog. 🐾

Budleigh Salterton feels like stepping back in time, with its enchanting charm reminiscent of an Agatha Christie novel. This nostalgic gem also boasts a wonderful selection of independent stores, along with numerous vintage and charity shops—perfect for someone like me who loves to shop sustainably. 🛍️

These dreamy hotcakes bring a burst of berry goodness to your plate. Perfect for a leisurely weekend breakfast or brunch treat. With creamy ricotta as the secret ingredient, each bite is irresistibly light and flavourful. ✨

Ingredients 
250g ricotta
125ml milk 
2 eggs
100g plain flour
1tsp baking powder
Pinch salt
2tsp veg oil
Chopped strawberries 

Method
Put the ricotta, milk and egg yolks in a bowl and mix well. In a separate bowl whisk the egg whites until fluffy. 

Add dry ingredients to the ricotta mix and combine. Tip in the egg whites and fold through. 

Heat 2tsp oil on a griddle or in a frying pan and dollop heaped dessert spoons of the mix into the pan. Cook for a minute or two on each side until golden brown. 

Serve with chopped, seasonal English strawberries and syrup or honey.

Ready to kick off my birthday week in style? 🎉 Join me on a culinary journey at @seahorse.restaurant in Dartmouth—an experience that’s been on my radar for years and did not disappoint! 🌊✨

The Seahorse enchants with its Venetian-inspired decor, featuring elegant white tablecloths, gleaming silver flatware, and beautifully set tables. The menu is a Mediterranean masterpiece, with inspiration from Spain, Italy, and France - each dish fresh, delicious, and an absolute delight for the senses. 🍽️

The atmosphere was buzzing, filled with the joyful hum of happy diners including owner @mitchseafood and his party of merry revellers. (I wish I had had the courage to say hello🫣) 

We dined from their menu del giorno - a snip at £35 per head. Three courses plus little nibbly extras which made the whole event even more special. Our wine of choice, a soft pink rosé from the Loire paired perfectly, making the lunch a true celebration of flavours. 🍷

My top tip is to arrive early so you can enjoy a drink in Joe’s Bar. We didn’t. Traffic was against us but next time I shall be sure to allow extra time to soak up the atmosphere.

There’s something oddly soothing about the gentle rumble of trains paired with a pint brewed on site. 🚂✨

So, I promised I’d be lowkey this weekend... and then I went full-on cream cheese Picasso. 🎨 Who knew you could turn breakfast into an art form? Here’s how to make your bagel bloom with a cream cheese flower:

Start with your favourite plain or flavoured cream cheese. Using the back of a spoon smear the cream cheese around the plate. Keep going around in a circle until you meet. Repeat on the inside of the circle and all the way to the centre until you have no plate visible. I was making this for two so used a side plate which only needed two circles of petals but if you were serving more you would use a bigger plate. 

Spoon capers into the centre and grate the zest of a lemon over the top. 

Serve alongside smoked salmon, cucumber and cherry tomatoes or your other favourite bagel toppings and build your bagel as you wish. 

Voilà! Your breakfast just became the star of the weekend. 🌟

ad Someone once told me that you never find an ugly vineyard, and they were right. 🍇✨ My visit to @pebblebedvineyards in Clyst St Mary confirmed it! This idyllic spot, nestled just outside Topsham down a charming country lane, is an English wine lover’s dream come true.

As I wandered through the rows of vines, I couldn’t help but marvel at the beauty and tranquility of the landscape. The sun kissed vines promising another season of exceptional wine now that the threat of frost is over. Every corner of this vineyard tells a story, from the rich soil that founder and geologist Geoff Bowen settled on to the gentle breeze that rustles the leaves.

The 2025 vineyard and winery tour season has just started and I was lucky enough to be one of the first guests to be expertly guided by Alex, the head winemaker and his assistant for the day and chief pourer, Amanda. (Thank you for always keeping our glasses full 🍷✨) The tour started with a glass of their exceptional sparkling rosé that eased us gracefully into the afternoon. From the meet and greet we wondered through the vines learning about the terroir, the grape varieties and a little about the history of Pebblebed before heading to the winery to sample 4 more wines. The tour culminated with a delicious cheese and charcuterie selection to enjoy alongside a glass of our personal favourite from the tasting. I opted for a glass of their red and my friend Viki, the white. With the weather being exceptionally kind to us we sat outside and took our time to enjoy the local cheeses sourced from @dartsfarm a mere stones throw down the road.

Cheers to the first evening on the terrace! 🌅🍕 steve and I kicked off the season with homemade pizzas, a bottle of delightful Italian natural rosé, and a sunset that was simply mesmerizing. The birds provided a cheerful soundtrack, making the evening even more magical.

I’m feeling so grateful for this sunshine-filled life, where delicious homemade food and beautiful sunsets are never in short supply. And then there’s Biscotti, my furry love-bug, who might just love terrace life more than i do! She’s living her best life out there, embracing every moment of our outdoor paradise.

Also, I have a little hack for you - may I recommend using scissors to cut your pizza.. so much easier than a knife! ✂️

Hello sunshine! 🌞 With the temperatures rising, it’s officially picky plate and rosé season. 🍇🧀 There’s nothing quite like basking in the warmth with a glass of chilled rosé and a beautiful assortment of nibbles. Even my cats, Dustin and Biscotti, are eager to join the fun and soak up the sun!

Today’s spread features cool cucumber slices, Italian olives that perfectly complement the wine, and Cantabrian anchovies on sourdough baguette with lots of butter. To top it all off, I’ve added stuffed vine leaves for that perfect Mediterranean touch. It’s a feast for the senses, ideal for leisurely afternoons.

Hey pickle lovers! 🥯✨ I just had to share this delicious pickle cream cheese bagel recipe using fresh bagels I picked up during my seaside visit yesterday. (Glad I stopped in @risebakestore - they had a fab selection) 

First, I finely chopped 2 to 3 gherkins and a dessert spoon of capers. Then, I mixed them into creamy @philadelphia_uki cream cheese. To give it that extra zing, I seasoned with black pepper, added a squeeze of lemon juice, and sprinkled on some dried dill (fresh dill would be better if you happen to have it!).

After toasting my bagel, I piled on the creamy, tangy mixture for a flavour-packed brunch. It makes a great breakfast or lunch too may I add. To be honest I would also have it for dinner if I wasn’t cooking for Steve or entertaining. It’s a simple, yet delicious combination that’s hard to resist. 😋

This morning, I woke up to glorious sunshine, and with no teaching until 4 PM, it was the perfect time for a beach escape. 🌞☕️ I took a leisurely walk along the shore, savouring an excellent cappuccino from @thecoastalbeaver and enjoying views that were absolutely to die for. (That water 💙) The sun on my skin felt amazing, a true reminder of the joys of warmer days. 🌊✨

And finally, it’s warm enough to step outside in my favourite @saltwatersandals_uk and let my tootsies feel free. Woo hoo! 🙌🏻There’s something so liberating about that first sandal day of the season!

We’ve been incredibly lucky to see our initial Instagram penpal status blossom into a true friendship that has weathered the test of time. Through fabulous highs and some terrible lows, we’ve always emerged stronger, with smiles on our faces and love in our hearts. 💖

Transform your day with this irresistible Kale, Parmesan & Fried Egg Tartine! 🌿🍳 Whether you’re craving a hearty breakfast, a delightful brunch, a satisfying lunch, or a light supper, this dish has you covered. Imagine crispy sourdough topped with garlicky kale, melted parmesan, and a perfectly fried egg with a runny yolk—pure bliss in every bite! 😋

Ingredients (serves 2)
2 pieces of sourdough 
100g kale
2 tablespoons olive oil plus extra for frying 
Juice 1 lemon 
1 clove garlic cut in half 
Salt and pepper 
2 eggs
Parmesan cheese, grated 

Method
Tip the kale into a bowl. Drizzle with 2 tbsp olive oil, juice of 1 lemon, half a garlic clove, grated and season with salt and pepper. Using your hands massage the kale until it softens a little. Set aside.

Toast the sourdough. Place the toast on a baking sheet. Drizzle with olive oil and rub with the remaining half of garlic. Pile half the kale on each slice. Grate a little Parmesan over the top. Put under the grill until the cheese melts and the kale wilts and crisps up. 

Meanwhile heat a little oil in a non stick pan and fry your eggs. You want the whites to be set and a little crispy around the outside and the yolks to be runny. 

To serve, place one kale toast on a plate. Add one or two fried eggs then liberally grate Parmesan cheese all over. Eat immediately ✨♥️
