Tzatziki

I was recently given the challenge by Shillingford Organics to create some recipes from their veg box. With it being barbecue season I figured I would do a few recipes that are perfect for outdoor eating. Of course you don’t have to limit this tzatziki recipe to the summer and barbecues. This dip is great for parties or served alongside meat and fish. Perhaps with a nice salad and some flatbreads.

Ingredients
  1. 500g whole-milk Greek yoghurt
  2. 4 cloves of garlic, or more or less to taste
  3. 2 tbsp extra-virgin olive oil
  4. ½ large cucumber
  5. 1 tbsp lemon juice
  6. Small bunch of mint, finely chopped
Instructions
  1. Grate the cucumber and squeeze the juice.
  2. Put the Greek yogurt, lemon juice, olive oil, garlic, and mint in a bowl.
  3. Add the cucumber and stir together.
  4. Pour into a serving dish and serve with flatbreads and crudités.
Notes
  1. You could also serve this alongside grilled fish or some lovely roast lamb.
