Hot Cross Bun Ice Cream Sandwich

When I was growing up we always used to have ice cream wafer sandwiches which I adored. Ice cream sandwiches in between to waffle wafers was just the best dessert as a child. This is my “adult” version using my homemade Black Tor Brewery Porter ale icecream!! Of course you can use whatever ice cream you desire. A good quality vanilla would be my “go to” if I didn’t have my homemade in the freezer. The delight on faces at the mere mention of this concoction is worth it.

Hot Cross Bun Ice Cream Sandwich

Ingredients
  1. As many hot cross buns as needed for your guests
  2. Good quality vanilla ice cream ( or another flavour of your choice)
Instructions
  1. Cut your hot cross bun in half and place under the grill or in your toaster and toast.
  2. Take an ice cream scoop and scoop some icecream onto the bottom layer of your bun. Place the top on and squish together. Serve straight away before it melts all over you!
