Decadent Rocky Road Terrine

You know when that 4pm slump happens and you crave a little sweet treat? Well this easy to make Decadent Rocky Road Terrine is the bomb and will ease you on your way to home time! Its just an assembly job once you’ve melted your chocolate, butter and agave syrup together. It couldn’t be simpler..

This recipe came to me when I was sent some Popcorn Shed popcorn to sample. Made to a secret family recipe in a shed at the bottom of the garden by two cousins. You couldn’t get more artisan. All of the popcorn is made by hand using all natural ingredients and free from nasty preservatives or additives. Completely suitable for vegetarians and gluten free for those with intolerances.

Each kernel is air popped to create fluffy popcorn and then lightly coated with a yummy caramel. Their popcorn is extremely moreish and I can categorically say that one piece is not enough. To make the joy go further I figured that mixing it in with dried fruit, nuts and yummy dark chocolate I could spread the Popcorn Shed love amongst more friends and family. Not one person that tried my terrine could deny how good it was!

Ingredients
  • 300 g dark chocolate (or use half dark half milk)
  • 100 g butter chopped
  • 3 tbsp agave syrup I used The Groovy Food Company
  • 50 g mini marshmallows
  • 100 g digestive biscuits broken into small pieces
  • 35 g popcorn I used Popcorn Shed Pecan Pie flavour
  • 100 g dried cranberries
  • 50 g chopped dried apricots
  • 50 g hazelnuts

Ingredients

Decadent Rocky Road Terrine
Instructions
  1. Melt the chocolate, butter and Agave syrup together in a heavy bottomed saucepan then set aside for about 5-10 minutes until cooled but still runny.
  2. Line a loaf tin with a sheet of baking parchment or loaf tin liner
  3. Place the marshmallows, biscuits, popcorn, apricots, hazelnuts and cranberries in a large bowl, pour in the cooled chocolate mixture and stir until everything is well combined and coated in chocolate.
  4. Tip into the prepared tin and flatten as best you can with a spatula, refrigerate for at least 3 hours, preferably overnight, until set then lift the slab out of the tin and cut into slices. Keep refrigerated.
