I don’t know about you but I love fruit in a salad. Some well known classics are pear, walnut and blue cheese, fennel and orange and of course the famous waldorf salad. I love the combination of sweet and savoury and this tomato and watermelon salad is no different. Perhaps this combination isn’t as well known as others but goodness me it works so well. A perfect summery lunch, a side dish to grilled fish or meat. You really have to give this simple recipe a go. To make it more of a main course the addition of feta or fried halloumi works well too. Enjoy!
Tomato and Watermelon Salad

Ingredients
- 5 cups (3/4-inch) seeded watermelon cubes1 1/2 pounds ripe tomatoes, cut into 3/4-inch cubes
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1 handful of basil leaves roughly torn
- 1 red chilli, deseededand finely diced
- 1 small red onion, quartered and thinly sliced
- 1/2 cup red wine vinegar
- 1/4 cup extra virgin olive oil
- Ground black pepper to taste
Instructions
- Combine watermelon and tomatoes in a large bowl; sprinkle with sugar and salt, tossing to coat. Let stand 15 minutes.
- Stir in onion, chilli, basil, vinegar, and oil.
- Sprinkle with ground black pepper to taste.
