Christmas Cacao Pudding

This festive pudding is totally vegan but tastes so creamy and decadent. Made with gorgeous “Boozy Christmas” Goupie chocolates that are vegan, gluten free and dairy free. The topping is a blend of avocado and banana with a little maple syrup for sweetness plus cacao for that chocolate hit! A perfect dessert thats quick and easy to make in 10 minutes. Perfect if you have an impromptu guest turn up over the festive period. Give it a try. You won’t be disappointed!

Ingredients
  1. 1 box of Goupie "Boozy Christmas" chocolates
  2. 1 tbsp cashew nut butter
  3. 2 ripe avocados
  4. 1 large very ripe banana
  5. 3 tbsp pure maple syrup
  6. Pinch sea salt
Instructions
  1. Empty the Goupie "Boozy Christmas" chocolates into a food processor with the cashew nut butter and blitz until you get a sticky Crumb mixture. Remove from the processor.
  2. Put the avocados, banana, maple syrup, cacao and sea salt into the processor and blitz until a smooth mousse like consistency is created. You do not want any lumps.
  3. Layer an 8th of the Goupie mixture at the bottom of a pretty serving glass/bowl and spoon over the chocolate mousse. Repeat so you have a layered dessert. You should use a quarter of each mix in each of the puddings. This recipe makes 4 in total. Eat straight away or chill covered with cling film until you are ready to serve.
